Our philosophy

The essence of nature

We seek the essence of nature through the distillation of plants, herbs and grains. That means working by hand, respecting nature's own timing, gathering our botanicals ourselves, growing our own grain and selecting the finest raw materials from around the world.

01

The craft

Hand and measure

Every product is made by hand, step by step: macerations followed day by day, copper stills run slowly, cuts decided by nose and palate at the spirit safe. No process is accelerated to fit a commercial calendar.

02

Nature's timing

Patience

We respect nature's timing, not our own. Herbs are picked when their essential oils peak, grain is threshed when the field decides, infusions macerate until they have finished speaking. The vintage goes into the bottle rather than being corrected away.

03

Gathering the botanicals

Hand-gathered

We gather the botanicals ourselves: juniper, myrtle, helichrysum, roots and bark from the hills around Priverno and the Mediterranean scrub of Lazio. Picked by hand, in small quantities, season by season — so we know exactly what enters the still, and when.

04

Our own grain

Cultivation

We grow our own grain on the clay soils of the Agro Pontino and the Valle dell'Amaseno: rye, Gentil Rosso wheat and Agostinella corn, dry-farmed, rotated with legumes that feed nitrogen back into the soil.

05

The finest raw materials

Selection

What our land cannot give, we look for where it grows best: sugar cane, citrus, spices and roots selected from chosen producers around the world, tasted lot by lot. We choose excellence in the raw material wherever it lives, and treat it with the same respect as our own grain.

06

The bottle

Bottling

Filled by hand, non chill-filtered, natural colour. Each label states the raw material, the batch and who worked it. If we cannot tell you where it came from, we do not bottle it.

Martin Kerri

Seed to Bottle

“Seed to Bottle” is the story of Martin Kerri, our single grain whisky label: a path that runs from grain sown on the estate to cask and glass without ever leaving our sight. It is that brand's philosophy, not a claim for the whole distillery.
